The First Symphony is exactly what mead has been meant to taste like throughout its long history. In recent years there has been a resurgence in craft mead production and this is our first contribution to the process.
The drink, containing only honey and water, tastes like Sauvignon blanc and Chardonnay with a light honey finish. Strong oak tones reflect the distinctive character of the unique, medium-light Estonian honey.

Mead is an alcoholic beverage fermented from honey and water, with possibility of addition of other ingredients such as spices or herbs or in combination with fruit juices.
Classical mead
Classical mead is made by fermenting honey and water without any other ingrediences. It keeps its original honey flavour and taste.
Production process
This mead was made cold. This means that during its production, the honey was not heated above 40-45 °C, which is the normal temperature in nature to which honey is resistant. At higher temperatures, some precious components of honey can be damaged and degraded. Cold-made mead is the best choice.

With each fermentation produced in small quantities to capture the unique terroir and flavor each batch of honey offers, Kullane Mõdu is therefore produced as an experiment from the heart and excitement.
