mead

Mead is an alcoholic beverage fermented from honey and water, with possibility of addition of other ingredients such as spices or herbs or in combination with fruit juices.

Metheglin

Metheglin is a type of mead with added (maturated) spices and herbs.

Production process

This mead is not cooked, however, during its production, the honey was heated above 50 °C for a limited time. It could be heated up to temperatures of 80 °C, when some components of honey may be degraded.

This mead is suitable for heating, but we recommend always keeping the maximum heating temperature to approx. 50-55 ° C. At higher temperatures, the precious components of honey could be damaged. For heating, we recommend sweeter and more pronounced mead, especially those with the addition of spices or herbs, the aroma of which pleasantly emerges when heated. However, you can taste the mead according to your wishes, as well as mulled wine.

The bee farm in Chlístov near Havlíčkov Brod mainly deals with the production of mead, the most popular recently being Old Bohemian mead.

Jiří Sláma has been beekeeping since childhood, and now he has over 170 bee colonies, which he does not care for because it is stressful for the bees. The bees are placed in habitats where nectar-bearing flowers with lots of pollen, as well as forests with honeydew, are within reach all year round.

He has been fully devoted to beekeeping and the production of mead since 2000. The mead matures in a deep cellar for at least a year. The offer presents several types of mead. Medovina z Vysočina is completely natural, even in the bio mead variant. Since 2012, it has also been producing Old Bohemian mead, which contains up to 45% honey and matures in oak barrels, according to an older recipe. The recipe comes from the 1950s.
