Bourbon Barrel Aged Cyser from 100% organic apple juice and sunflower honey.
Original Sin V.2.0 is our second edition of this mead. It was made with organic apple juice from Reine des étoiles, Belle de Boskoop, Joseph Mulsh, Golden Delicios and Jonathan, among others. All of them heritage apples that can no longer be found in commercial cultivation.
In the nose we find apple -of course-, honey and oak. The taste evolves on the pallet from the sweet, floral honey and the light acidity of the apple to tropical fruit with an undertone of dried apricots and date. Also clearly present is the boozyness and the bourbon character. Afterwards, the light astringency of the tannins from the American white oak and the apple peel, creates a delicate mouth drying effect. Over all of this there’s an unmistakable vanilla presence. In the aftertaste a lot more apple that lingers for minutes.

Mead is an alcoholic beverage fermented from honey and water, with possibility of addition of other ingredients such as spices or herbs or in combination with fruit juices.
Melomel - cyser
Cyser is a type of melomel which is fermented with apple juice.

Production process
This mead was made cold. This means that during its production, the honey was not heated above 40-45 °C, which is the normal temperature in nature to which honey is resistant. At higher temperatures, some precious components of honey can be damaged and degraded. Cold-made mead is the best choice.
This mead is suitable for heating, but we recommend always keeping the maximum heating temperature to approx. 50-55 ° C. At higher temperatures, the precious components of honey could be damaged. For heating, we recommend sweeter and more pronounced mead, especially those with the addition of spices or herbs, the aroma of which pleasantly emerges when heated. However, you can taste the mead according to your wishes, as well as mulled wine.
