This year's novelty, which was created as a test sample, when a lot of lemon balm grew in Lukáš Pleva's garden. Since we love lemon balm tea, we thought that it could also make excellent mead. Lukáš's daughters collected lemon balm and Milan Pleva put it into mead. We were so excited by the resulting taste of lemon mead that we decided to make it possible for you to taste it too.
And how does mead with lemon balm taste? We can't get enough of the scent of lemon balm mead, which can be compared to a sweet-smelling French perfume, the smell of which constantly draws you in. After tasting, your taste buds will be flooded with a very sweet, captivating honey flavor with a subtle herbal touch, which in the undertones is slightly reminiscent of gummy bears. But finding an exact comparison that captures its taste is difficult, so we would be interested in your opinion and we would be happy if you let us know how you would describe the taste of lemon balm mead.
Mead is an alcoholic beverage fermented from honey and water, with possibility of addition of other ingredients such as spices or herbs or in combination with fruit juices.
Metheglin is a type of mead with added (maturated) spices and herbs.
This mead was made cold. This means that during its production, the honey was not heated above 40-45 °C, which is the normal temperature in nature to which honey is resistant. At higher temperatures, some precious components of honey can be damaged and degraded. Cold-made mead is the best choice.
