Due to the long ripening period, about 8 years, it contains a minimum of residual sugar, which has been converted into alcohol. Hop mead is not sweet and has a mature, well-spiced taste. This mead resembles a very dry wine. Bitterness is supplied by hops from the Rakovnik region.
