Cold produced meads
During cold production, there is no heat treatment that would damage the valuable substances contained in the honey. Honey can be sensitively heated for better mixing with water before fermentation, but the values normally present in nature, to which honey is resistant, must not be exceeded - up to 40°C.
Some manufacturers sometimes state that the mead is unboiled. But that doesn't mean the cold way (it can mean anything below 100°C). Watch out for the word game.
